Introduction

Ingredients

    4 cups marinara sauce

    In small mixing bowl with mixer mix the following thoroughly and let sit for 30 minutes.
    3 eggs
    3/4 cup water
    3/4 cup white flour
    1/8 tsp
    Make thin crepes using 3 tablespoons of the batter. I use two like pans and flip from one to the other then on to waxed paper to cool, putting waxed paper between crepes. Makes 12 crepes.

    15 oz ricotta, low fat
    4 oz. mozzarella cheese
    1/3 cup parmesan cheese
    10 oz pkg of frozen spinach, thawed

    Stir all the above ingredients together. Put about 1/3 cup of this across the middle of each crepe and roll up. Put these rolled manicotti into a 9" x 13" rectangular pan that has 2 cups of marinara sauce spread over. Put 8 on the bottom and a second layer of 4 on top. Put remaining sauce over the top along with 2 tablespoons of parmesan cheese.

    Bake at 350 degrees for one hour.
