Crunchy Cabbage Slaw Salad

Ingredients

1 large head of cabbage, shredded
1 large apple, sliced/grated
1 c. walnuts (toasted in oven at 350 degrees for just a few minutes)
1/2 c. extra virgin olive oil
1 lemon juiced
2 tbs apple cider vinegar
dash salt and pepper to desired taste
Can add a splash of heavy cream to the dressing (not included in calorie count)
Directions
Shred and clean cabbage (best if done in food processor)
Using a grater, or slicing very thin, slice up a whole apple place in a bowl of water with the juice of a lemon wedge (prevents browning) Set aside
preheat oven to 350 degrees, crush walnuts and bake for a few minutes (they will cook quickly so keep in eye on them!)
In a small bowl whisk the lemon and cider together. Slowly add olive oil, then salt and pepper.
Combine Cabbage, walnuts, and apple slices in a bowl-- pour dressing on when prepared to serve.
