French Toast with Toasted Almonds

Introduction

A very filling and indulgent French toast. One slice will definitely fill you up. There are many opportunities to substitute low-fat things here (use buttery spread instead of butter, or use lower fat milk and sour cream, or 3 whole eggs + 3 egg whites, etc...) Ingredients

    Stale bread, eggs, milk, sour cream, brown sugar, butter, almonds, salt and pepper to taste.

Directions

Begin by chopping almonds (or use pre-chopped). Lay almonds flat in an oven-proof pan or tray, and toast at 400 degrees or until just golden brown.

While the almonds toast, lay stale bread slices next to each other in a casserole dish. In a bowl, whip together eggs, egg whites, milk, and sour cream. Its ok if the sour cream doesn't fully meld with the rest. Pour this mixture on the bread and allow to soak into the bread for about 10 minutes.

In a separate pan, melt the 3 tbsp butter and 1/2 cup brown sugar together. Keep over very low heat. Add a little salt for a more caramel flavor.

After the milk and egg mixture has saturated the bread, remove the almonds from the oven and sprinkle on top of the bread. Move the French toast to the oven and cook for about 35-45 minutes at 350.

Before serving, drizzle the sugar-butter syrup over, and sprinkle very good quality coarse sea salt over top. Serve warm with fresh fruit, or a sprinkle of powdered sugar!
