Decadent Saucy Chicken Breasts

Introduction

I know this meal is high in calories and fat and sodium, but it can easily be adapted as a low-cal, low fat meal by incorporating ingredients of same instead of what I have listed here. I designed this meal in a pinch and had to track the nutritional information correctly. Ingredients

    3 T Olive Oil
    4 Chicken Breasts, boneless and skinless
    4 oz. Mozzarella Cheese (4 slices)
    1 C Chopped celery, including tops
    3 C Broccoli Florets
    1/4 C Chopped Onion
    1 Can Cream of Chicken Soup (10.5oz)
    1/2 C Milk
    1/4 C Sour Cream
    1/4 C Mayonnaise
    1 T Dried Oregano
    1/2 t Garlic Salt
    1 Can Extra Large Black Olives
    1/2 C White Wine
    Juice from Olives

Directions

I heated Olive Oil in a large skillet on medium-high heat and seasoned the oil with oregano. My chicken breast filets were frozen, so I laid them in the pan and covered with a tight-fitting lid. After a few minutes, I flipped the breasts and covered with lid again. A few minutes later, I added the celery and onion and sauteed with the chicken for a couple minutes. Then I added a little juice from the can of black olives and turned the burner down to medium. I added the broccoli and black olives and cooked for a couple minutes. Then I turned lowered the heat to simmer and covered. I mixed the 1/4 C Sour Cream with the 1/4 C Mayo and garlic salt and some oregano. Set aside. Empty can of cream of chicken soup into a bigger bowl and stir in oregano and a little bit more of the black olive juice along with the white wine. Stir in the sour cream/mayo mixture and add milk to get to the consistency of sauce that you like. Add to pan and simmer til chicken is cooked, but juicy. Place 1 oz or 1 slice of mozzarella cheese on each chicken breast, cover and cook until the cheese melts. Serve over pasta or rice.

This recipe can be "healthy'd" up by using low sodium cream of chicken soup, low fat sour cream and mayo, part-skim mozzarella, and whole grain pasta or brown rice.
