Banana Bran Muffins

Introduction

Healthy and not too sweet. Very adaptable: I cut the amount of raisins and sunflower seeds; you could leave them out and still have a yummy breakfast or snack muffin. Lots of fiber, too! Ingredients

    1 cup flour, whole wheat or other
    2 1/2 tsp. baking powder
    1/2 tsp. salt
    1 cup wheat bran

    3 tbsp. sugar (or brown sugar, or honey)
    1 beaten egg
    1/4 cup milk
    2 tbsp. oil
    1 cup mashed banana (2 large, 3 small)

Directions

Preheat oven to 400° (180° C). Prepare a 12.cup muffin tin.

Sift together dry ingredients and stir in the bran. Add seeds (or nuts), raisins. Mix together sugar, oil, egg and milk, then beat in the banana. Mix dry and wet ingredients lightly. Fill the muffin cups 2/3 full. Bake at 400° for 20-25 minutes.

Best served warm!
