Introduction

I found this recipe on allrecipes.com, which is really good, but I made a couple of switches to shave off some calories. I switched regular mayo for light, and turkey bacon in place of regular. Ingredients

    9 slices turkey bacon
    4 boneless skinless chicken thighs
    .25 cup light mayo
    .5 cup mustard
    2 tbsp honey
    2 tbsp corn syrup
    4 oz fresh mushroom slices
    1 cup shredded cheddar cheese
    1tsp onion powder

Directions

Each piece of chicken = 1 serving

Mix together mustard, mayo, honey, corn syrup, onion powder; set aside.Cook bacon;set asideLightly brown chicken on both sides. Put into a 13 x 9 pan and coat the chicken with the honey mustard sauce. Lay 2 slices of bacon across each piece of chicken, followed by mushroom slices. Sprinkle each piece lightly with cheese, and bake at 350 for a half hour.
