My Baked Spinach Ziti

Ingredients

    10 oz package fresh spinch, rinsed and cooked 2-3 min
    16 oz pkg Barilla Cellentani pasta, cooked
    1 15 oz container Part Skim ricotta (sorrento)
    25 oz. jar Emerils 3 Cheese Sauce
    1/2-3/4 pkg reduced fat 4 cheese mexican cheese, divided

Directions

Cook pasta according to package instructions. Rinse spinach, add to pot and cook over medium heat for 2-3 minutes. Remove, squeeze out excess water and rip sections into smaller pieces (or chop). In large bowl combine hot pasta and ricotta cheese until blended. Add 3/4 cup shredded cheese, stir to blend. Stir in spinach and then sauce and combine.
Grease a 9 X 12 casserole dish, add pasta mixture. Scatter remaining cheese over the top of the pasta dish. Bake at 375 for 20 minutes or until heated thoroughly.
Makes 8 servings.
