Carrot and potato soup

Introduction

Great way to eat your not so fresh veggies. Great way to eat your not so fresh veggies.
Number of Servings: 6

Ingredients

    olive oil
    1 medium choped onion
    choped carrots and potatoes (what's left in the fridg)
    6 cups of homemade chicken broth
    herbs of your choice (i use herbs of Provence and parsley)
    salt and pepper to taste

Directions

In olive oil, cook the onion, carrots and potatoes for about 10 minutes. Add the herbs and cook for 2 minutes. Add the chicken broth, salt and pepper to taste. Cook for about 30 to 45 minutes till the veggies are done. Blend to cream the soup, serve and add parsley to garnish.
