Pita Pocket (makes 2)
Salsa 1/4 cup
olives 2 Tbsp
olive oil 1 tsp.
Now toast the pita for a minute under the broiler (so that it doesn't go soggy) then take out and spread with 1/4 c. salsa (or chopped tomatoes) Spread olives over, add spices, drizzle with oil and spread shredded cheese over top and put under the broiler again until cheese has melted.
For those who are not so calorie conscious, you can also use any open face bun. 1 Pita makes 2
