Cream Cheese filled Cupcakes

Introduction

Number of Servings: 24

Ingredients

    Filling:
    1 pkg (125 g) light cream cheese, softened
    1/4 cup sugar
    1 egg yolk
    1 cup milk chocolate chips

    Dry:
    1 1/2 tsp baking soda
    2 1/4 cups flour
    1/3 cup unsweetened cocoa
    1 cup sugar
    1/2 tsp salt

    Wet:
    1 1/2 cup water
    3/4 cup olive oil
    1 1/2 tbsp vinegar

Directions

Beat together first three ingredients. Stir in chocolate chips. Set aside.

Sift together dry ingredients in large bowl.

Mix together wet ingredients. Add to dry. Mix well.

Fill paper-lined muffin cups 1/2 full with batter. Top each with about 1 tbsp of filling.

Bake at 350F for 20-25 minutes.

Cool on rack.
