Cherry Cake

Introduction

This cake is very good! I grew up eating this every Christmastime (of course not the whole cake). This cake is very good! I grew up eating this every Christmastime (of course not the whole cake).

Ingredients

    2 c. glace cherries, halved
    1/2 c. slivered almonds
    1/2 c. white flour
    1 c. hard margarine
    1 c. granulated sugar
    1 tsp. each vanilla and almond extracts
    4 large eggs
    1 1/2 c. white flour
    2 tsp. baking powder
    1/2 tsp. salt
    1/3 c. skim milk

    1 tbsp margarine + 2 tbsp. flour to grease and flour a bundt pan. Included in nutritional information.

Directions

Combine the cherries, almonds and first amount of flour, stir to coat. Set aside.

In a big bowl cream the margarine, sugar, and flavourings, until light and fluffy. Add eggs one at a time, beating for 1 minute after each addition. Add the remaining dry ingredients to the creamed mixture, alternating with the milk. Stir in the floured cherries and nuts.

Spread into greased/floured bundt pan and bake at 300 F for 1 hour.
