Blueberry Spice Cake

Introduction

Number of Servings: 24

Ingredients

    1/2 c. hard margarine
    1 c. brown sugar
    4 eggs
    1/2 c. fancy molasses
    3 c. white flour
    1 tsp. baking soda
    2 tsp. baking powder
    2 tsp. cinnamon
    2 tsp. allspice
    2 tsp. ginger
    1 tsp. cloves
    1 tsp. nutmeg
    1 tsp. salt
    3/4 c. warm water
    3 c. blueberries (if frozen, use unthawed)

    1 tbsp. margarine + 2 tbsp. flour to grease/flour a bundt pan. Included in nutritional information.

Directions

Cream the margarine and brown sugar. Add the eggs, one at a time, and beat in the molasses. Combine the dry ingredients and add to the wet ingredients alternately with the warm water. Fold in the blueberries. Spread the batter into a greased and floured bundt pan. Bake at 350 for 1 hour, or until a toothpick inserted comes out clean.
