Chocolate Banana Puffs

Ingredients

    3 egg whites
    1 pinch of salt
    3/4 C granulated Sugar
    1 tsp Vanilla Extract
    1 medium banana, sliced into 36 slices
    30 grams extra dark chocolate (I used Lindt Excellence 70% cocoa bar), cut into 36 pieces

Directions

preheat oven to 250

beat egg whites and salt on a bowl over high speed. When they get foamy add the sugar. Beat on high until the whites are glossy and form stiff peaks. Add vanilla, if desired, and mix in well.

On a lined cookie sheet, drop quarter sized blobs, evenly spaced. With a butter knife even out the circles until they are flattened. In the middle of each circle place one banana slice and one piece of chocolate. On top of that drop another blob of the meringue mixture. With your butter knife, smooth out the top and blend the top and bottom meringue...like you are icing a cake. You want to make sure the banana and chocolate are sealed in the egg white. Put it in the oven and bake for 20-40 minutes, based on your favorite texture meringue. They will puff a little.

Makes 3 dozen puffs

Variations:

If you'd like golden brown puffs preheat to 400, bake for 10 minutes and turn down heat to 200 to allow cookies to dry out.

If you'd prefer you can also shave or grate the chocolate directly into the egg whites after they are beaten and craefully fold in. Then just sandwich the banana
