IntroductionAdopted from the Super Natural Cooking Cookbook Adopted from the Super Natural Cooking Cookbook
1/8 a block of tofu (make sure to press between paper towels to release any water.)
1/2 small onion chopped
1 garlic clove, crushed
1/4 tsp. extra virgin olive oil
1 c (a handful) of spinach (steamed, if not frozen)
1/4 tsp curry powder
dash salt and pepper
Add chopped onion and garlic- saute until softened.
Add curry powder and then crumble and add tofu.
cook for 4-5 minutes.
Add spinach and heat until wilted.
Taste and adjust seasonings for preference. Enjoy :)
Serves one person. Can be served aside of rice or quinoa, in a tortilla, or any other nutritional and yummy way you can think up!
