Chicken Broccolli Curry Casserole

Ingredients

    2 bonelesss breasts of Chicken
    2 cups of blanched Broccolli
    2 cans cream of Celery soup
    1 cup Mayonnaise
    1 tbsp of Curry Powder (or to taste)
    1 cup Shredded cheddar cheese
    3 cups of Cooked Rice

Directions

Chop chicken and fry to white and add to casserole dish. Blanch the Broccolli and also add to the casserole dish. Mix the soup, mayonnaise and curry in a bowl and pour over the chicken and broccolli in casserole and cover with shredded cheese. Bake in the oven at 325 for 40 minutes. Prepare rice while baking casserole. Serve casserole on a bed of rice. This is also nice over broad noodles. Substitue with light mayos and other alternatives very easily without much effect on the final flavour.
