Introduction

This festive and tasty dish is great for a raw holiday meal. It's a fooler, too; everyone thinks it has been cooked. From Jackie Graff's wonderful demo at Raw Spirit 2007. Ingredients

    1 medium butternut squash (about 2 pounds)
    2 t sea salt
    1 T curry
    1 t cumin
    2 T coconut butter
    1 C raisins
    2 C water for soaking raisins
    3 medjool dates, pitted
    2 t psyllium powder
    .5 C pumpkin seeds

Directions

Blend spices, coconut butter, raisin soak water, and dates. Add squash and blend until silky smooth. You may have to add more water. Add psyllium and blend again. Place in serving dish immediately, mix in raisins, and spread pumpkin seeds over the top. I soak the pumpkin seeds first.
