Introduction

This dish was made by my great grandmother, grandmother and my Mom still makes it. Even though they all did it a little differently, they all call it the same. My Mom puts a little cheese on hers. I prefer mine without it.
It is especially good with your home-grown ingredients!

Number of Servings: 8

Ingredients

    1 tbsp olive oil
    1/2 cup diced onion
    1 can stewed tomatoes
    1 cup sliced yellow summer squash
    2 cups sliced zucchini
    2 cups frozen corn kernels
    1 cup diced fresh tomato
    1 six ounce can tomato paste
    1/2 to 1 cup water (if desired for consistency)
    salt, pepper to taste

Directions

In large pan, cook onions in olive oil over medium heat until nearly transparent.
Add the stewed tomatoes, tomato paste, zucchini slices, yellow squash slices and corn one at a time, stirring each in after adding. If the consistency is too thick, add water til you achieve desired consistency.
Continue cooking over medium heat just til the squashes are tender.
Add fresh tomato dices and stir well. You may serve immediately or wait til the tomato dices are hot, too.
This dish may be spiced up as you desire. I prefer it with Sea Salt and pepper, but it's really good with basil, oregano and garlic, too. Use your creativity!
Makes approximately 8 one cup servings.
