Number of Servings: 6

Ingredients

    coconut oil
    onion
    garlic
    turnips
    sweet potato
    cider or apple juice
    soymilk
    salt
    pepper
    Bragg or tamari

Directions

melt the coconut oil over med heat. add the onion, chopped. saute for 1 min, add garlic and sutee for another 2-3 min til onions are translucent. Add turnips and sweet potato, cut in 1" chunks. saute for a 2-3 min. add apple juice (I prefer cider), salt approx 1/4 tsp and 1/2 t black pepper, and 1tsp bragg aminos (or gf tamari.) If you don't need to be concerned about gluten you can use ordinary soy sauce. bring to a boil. Reduce, add soy milk (or rice or almond milk) and simmer til root veggies are tender. blend til creamy. serve. **please note this soup is VERY filling, so smaller portions are recommended.
