Introduction

A quick, easy dish that can be made from panty (and freezer) staples. High is fiber and delicious. A quick, easy dish that can be made from panty (and freezer) staples. High is fiber and delicious.
Number of Servings: 5

Ingredients

    1 16-oz bag of frozen black eyed peas
    1 tsp olive oil
    1/2 large or 1 medium onion, raw, minced
    3 cloves garlic, minced or pressed through a garlic press
    1/4 cup white wine, 2 oz
    1 14-oz can of diced tomotoes
    1 14-oz can of crushed tomatoes
    3 anchovy fillets, minced
    1/8 tsp red pepper flakes
    1 tbsp Olive Oil
    1 cup fresh basil leaves, minced

    Note: Any variety of bean can be substituted for the black eyed peas. Use frozen or canned or soak dried beans overnight. Instead of peas, you can use green beans or any quick cooking veggie.
    Pepper, red or cayenne, .14 tsp (remove)
    Peas, frozen, 0.5 cup (remove)

Directions

1. Cook the black-eyes peas as directed.

2. While peas are cooking, saute the onion in 1 tsp of olive oil. When onion is soft, add the garlic and saute 30 seconds more or until fragrant.

3. Deglaze with the white wine

4. Add the tomatoes, both varieties, anchovies, and red pepper flakes. And simmer for 20-25 minutes.

5. Add the peas and black eyed peas. Heat through. About 5 minutes.

6. Off heat, add the basil and 1 tbs EVOO.

Serve as is or over pasta. Serves 5.
