Crock Pot Beef Stew

Introduction

Number of Servings: 6

Ingredients

    2 lbs beef, cut into 1 inch pieces (any type of beef meat you like will work)
    3 medium potatoes, peeled and cut into chunks
    1 medium onion, chopped
    2 stalks of celery, chopped
    2 cups chopped carrots
    2 cups fresh mushrooms, sliced
    1 cup sliced bell pepper
    2 garlic cloves, minced
    1 can beef broth
    flour, approx. 1/4 cup
    2 tbsp extra-virgin olive oil

Directions

Heat olive oil in a skillet over medium high heat. Coat beef pieces in flour and sear in the pan, 1-2 minutes on each side. Drain off excess fat.
Layer chopped vegetables in the bottom of the crock pot. Add meat on top and season with any spices you like (I usually use bay leaves, salt, pepper, dried thyme). Pour beef broth over top and cook for 4-6 hours, until vegetables and meat are tender and cooked through.
