Lowfat Beef Meatloaf

Introduction

Very Tasty Meatloaf Very Tasty Meatloaf
Number of Servings: 8

Ingredients

    1 pound very lean ground beef (<5% fat)
    1 small onion diced
    2 tsp Lea & Perrins Worecestershire sauce
    1 Cup Campbells Tomato Soup divided
    1 Large Egg beaten
    1/4 Cup Quick cook oatmeal
    2 slices of bread to line the bottom of pan - it helps keep the bottom of the loaf moist & absorbs any fat. Do not eat them or put in mix!!

Directions

Preheat oven to 350F - spray baking pan with non stick spray. Place the 2 slices of bead in bottom of pan!
Mix all 1/2 cup of soup with all other ingredients
(!EXCEPT the 2 slices of bread!!!)
reserve the other 1/2 cup for saucing meatloaf later. Mix well. Working to make sure oats are incorporated well. Form into loaf getting the "cracks "out. Place your loaf on bread platform & bake in preheated oven for 45 mins.
Spoon Tomato soup over loaf in pan & cook 10 minutes more. Remove meatloaf from oven and let rest in pan for about 5 mins. more .
Lift meatloaf with a metal "burger turner " off of the bread and place on plate - cut into 8 equal pieces with a sharp knife.
Note I usually serve green beans, salad & Rice made with stock . This is a hit meal with kids and Hubby- they don't miss the old fatty version!
