Veggie protein Chili

Introduction

This is a spicy Vegetarian Chili made with ground soy protein. This is a spicy Vegetarian Chili made with ground soy protein.
Number of Servings: 4

Ingredients

    2 tbs Olive oil
    1 medium onion( finely chopped)
    1 medium sweet potato ( peeled and chopped), you can use a carrot if you want
    1 poblano chili pepper, cored, seeded and chopped( I used a bell pepper for less spice
    12 Smart Lean original flavor soy protein
    28 oz of whole tomatoes( diced)
    1 cup of black beans and 1 cup of kidney beans
    2 Tbs chili powder
    1/2 tsp Oregano
    3 cloves of garlic.. finely chopped
    1 tbs cumin
    1/2 tsp crushed red pepper flakes
    1 tsp sugar
    2 bay leaves
    1 small chipotle pepper
    1 tsp of salt and pepper to taste

Directions

Makes 4 large bowls
Heat olive oil , when it is very hot add onions and saute 2 minutes, until soft, add sweet potato and pepper and saute another minute.Stir in he smart Ground and allow to brown around 3 minutes
Add tomatoes and juice, beans, garlic, chili powder, oregano, cumin, red pepper flakes, and stir. Add sugar, bay leaves and chipotle. Cover and simmer until sweet potato is done( 30 minutes give or take) Stir once or twice and add salt and peppper.
