Mixed Berry CousCous

Introduction

Number of Servings: 4

Ingredients

    1 cup instant couscous
    2 cups apple and blackcurrent juice
    1 cinnamon stick
    250 g raspberries
    250 g blueberries
    250 g strawberries, halved
    2 teaspoons grated lime rind
    1 tablespoon finely shredded fresh mint
    200 g plain low-fat yoghurt
    2 tablespoons maple syrup

Directions

1. Place the couscous in a bowl. Pour the apple and blackcurrent juice into a small saucepan and add the cinnamon stick. Brint to the boil, then remove from the heat and pour over the couscous. Cover with plastic wrap and leave to stand for 5 minutes, or until the liquid has been absorbed. Remove the cinnamon. Chill.

2. Separate the grains with a fork, add the berries, lime rind and mient. and gently fold through. Spoon the mixture into four bowls. Top with a large dollop of yoghurt and drizzle with the maple syrup. Serve chilled.

Variation: Try using orange juice and dried fruits or fresh mango, pear, peach and apple.
