Sherry's Oh-So-Simple Brown Rice Pudding

Submitted by: SHERRYBOAS

Introduction

This is an easy to make, healthy dessert or nutritional snack without any added sugar or oil. This is an easy to make, healthy dessert or nutritional snack without any added sugar or oil.
Number of Servings: 4

Ingredients

    about 1/2 cup raisins
2 cups cooked short grain brown rice
just over 1 cup of very vanilla silk soymilk
    3 eggs

Directions

Preheat oven to 350 degrees and while the oven is heating up, crack 3 eggs into an ovenproof baking dish. There's no need to oil the dish first, just add the eggs.

Pour in just over a cup of very vanilla silk soymilk and mix together with the eggs.

Add two cups of cooked short grain brown rice - I prefer Lundberg brand - and about 1/2 cup of raisins - more if desired.

Hand mix everything together then pour it all into an oven-proof baking pan and put into the preheated oven.

Bake for at least an hour or until the top and sides start to turn brown. You'll know it is done when the center is solid, not jiggly.

This tastes good when warm but even better the next day when cold. I like to eat mine cold with a dollop of Willis Wood's Pure Cider Jelly on top. Yum!
