about 1/2 cup raisins
2 cups cooked short grain brown rice
just over 1 cup of very vanilla silk soymilk
Pour in just over a cup of very vanilla silk soymilk and mix together with the eggs.
Add two cups of cooked short grain brown rice - I prefer Lundberg brand - and about 1/2 cup of raisins - more if desired.
Hand mix everything together then pour it all into an oven-proof baking pan and put into the preheated oven.
Bake for at least an hour or until the top and sides start to turn brown. You'll know it is done when the center is solid, not jiggly.
This tastes good when warm but even better the next day when cold. I like to eat mine cold with a dollop of Willis Wood's Pure Cider Jelly on top. Yum!
