Meatloaf Mama's Way

Introduction

Mama's meatloaf is from the depression era when she grew up, and it is NOT a diet food, so plan your day's menu around this to stay on track. It goes great with a baked potato and green salad. It's a simple basic recipe... you can spice it up or down by using Marinara sauce or salsa in place of the tomato sauce, but my family all like it as it is!... Ingredients

    2 lb. Ground beef, extra lean
    2 lg Eggs, fresh
    1 c. Saltine Crackers, crushed
    1 medium sized Onion, raw, chopped
    1 8oz can Tomato Sauce
    Pepper, black, .5 tsp (remove)
    (Additional Salt isoptional)

Directions

Set aside half of the tomato sauce. Mix remaining ingredients in a large bowl, kneading them together. You may use a food processor if you wish, it will produce a smoother blend~ but I like to get my hands dirty. I crush the crackers by hand directly into the mix, and it's a bit chunkier that way~ also a great skin conditioner! LOL

Place mixture into a large loaf pan, shape into a loaf, and pour the remaining tomato sauce over the top. Bake in 400 degree oven for approximately 1 hour. Different ovens vary, so you can check for doneness by slicing into the loaf with a butter knife... it's done when it isn't pink inside, and the loaf feels solid.

You can put your whole baking potatoes when you do the meatloaf, and it all comes out done about the same time.

A family meal, this recipe makes 10-12 servings. The recipe is easy to cut in half if you have a smaller group of people, or you can freeze leftovers, it works well that way.
