IntroductionMy husband and four year old son gobbled this up! It's great on cold winter night. The corn gives it a great yet subtle sweetness and the grilled onions add extra flavor. -1/2 c chopped onions
-1 can Stokes Green Chile sauce with pork
-3/4 C Fat Free chicken broth like Aldi's Fit n Active
-1 can, drained and rinsed black beans, yields 1 1/2C
-1 C frozen corn
-1 1/4 C Success Rice cooked in 1 1/4 C ff chicken broth
--While the rice is cooking, chop your onion, open your cans and rinse your beans. Put your onion in a med. nonstick pot and saute them until just tender and then add the other ingredients and stir well. Cook on med/high until it begins to boil. Turn down the heat to simmer and cook for about 3-4 minutes, stirring occasionally. This is great with 1/2 of a peanut butter and honey sandwich on Arnold round thins (not in the nutrition).
