Spicy Chicken Tacos

Introduction

The original recipe actually called for ground chicken; however, I prefer sliced breasts so I modified it. You could also add sour cream to your taco, again I did without. Number of Servings: 8

Ingredients

    4 chicken breast halves (sliced)
    1 cup diced onion
    3/4 cup diced bell pepper (I chose red)
    1 tsp. minced garlic
    2 cups seeded and diced tomatoes
    1/2 cup grated carrot
    1 tbsp chili powder
    1 tbsp red wine vinegar
    2 tsp brown sugar
    1 tsp ground cumin
    1/8 tsp freshly ground black pepper
    8 lettuce leaves
    8 dempsters whole wheat tortilla's
    1 cup shredded 2% cheddar cheese

Directions

1. Spray a large, non-stick skilled with cooking spray. Add chicken, onions, red pepper, and garlic. Cook and stir over medium-high heat until chicken is no longer pink, about 7-8 minutes. Drain off any liquid
2. Add 1 cup tomatoes, carrot, ketchup, chili powder, vinegar, brown sugar, cumin, and pepper to chicken. Reduce heat to medium-low. Cover and simmer for 10 minutes, stirring and simmer for 10 minutes, stirring occasionally. If mixture is too saucy, simmer uncovered for a few more minutes, until most of the liquid has evaporated. Remove from heat.
3. To assemble tacos, place on lettuce leaf in center of a tortilla. Spoon 1/8th chicken mixture over top. Sprinkle some of the cheese and some of the remaining tomatoes over chicken. Roll up tortilla to cover filling, then fold in sides.

Serve Immediately.
