Smoked Salmon & Asparagus Quiche

Ingredients

    I pillsbury refrigerated crust
    3 large eggs
    1 cup soy milk
    1/2 cup half and half
    4 ounces smoked salmon
    4 ounces crumbled goat cheese
    1 cup diced lightly steamed asparagus, diced
    1 tbsp dried dill weed
    1/8 tsp black pepper
    1 tbsp olive oil
    1/2 cup chopped shallots

Directions

Preheat oven to 350�. Unroll and press pastry crust into deep dish pie plate. Line crust with aluminum foil or parchment paper, pressing into the corners and edges. Fill at least two-thirds with baking weights ( dried beans work). Bake for 15 minutes, remove from oven and let cool a few minutes. Remove paper and weights. Poke the bottom of the pie pan with a fork and return to oven. Bake for an additional 10 minutes. Cool.

Add fresh asparagus spears to a nonstick saute pan and add water (don't need to cover the spears - just need enough to simmer) and cover with lid - simmering for a couple minutes until bright green. Drain and shock with cold water. Dice up.

Heat oil in a small skillet on medium heat. Add the shallots and cook until translucent, a couple minutes, remove from heat. Whisk eggs in a medium bowl and add in milk, cream, dill, and black pepper.

Line the bottom of the quiche crust with cooked shallots. Put one layer down of half the smoked salmon, goat cheese and asparagus. Pour half of the egg/milk/cream mixture in the quiche shell. Layer down the remaining ingredients and pour the remaining egg mixture over it.

Bake at 350�F until just set in the center, about 35 to 45 minutes. Remove from oven and cool for 15 minutes before serving.

    4 ounces (sorry I had to rebuild the recipe when the page accidently reloaded and didn't notice the salmon didn't get added in!).
