Garden Frittata

Introduction

Number of Servings: 4

Ingredients

    5 Large eggs
    4 Large egg whites
    2 ozs Water
    1/8 tsp Salt
    1/8 tsp Pepper
    1 cup Asparagus, cut in 1-inch pieces
    1 cup Spinach, fresh
    1 tsp (2 cloves) Garlic
    1 cup Chopped chives, or green onions
    1/2 cup Grape tomatoes, sliced in half
    1/2 Tbsp Oregano, fresh
    1 cup Cooked wild rice
    9 ozs. Shredded chicken
    1/2 cup Feta Cheese, crumbled

Directions

Prehear broiler. Whisk together the first five ingredients, set aside. Coat a large skillet with cooking spray. Heat on medium heat, add asparagus, spinach and garlic. Cook for two minutes. Add chives, cook for one minute. Add tomatoes, oregano, rice and chicken, cook one minute, or until heated, spread evenly. Add eggs, sprinkle cheese on top.
Cook four minutes or until the bottom is set. Wrap the handle in foil, and place under broiler four minutes or until set.
Serves Four.
