Kasey's Chicken Vegetable Soup

Introduction

Very satisfying and packed full of flavor, this soup is super low calorie but doesn't taste like it! Simple to make and doesn't take long to prepare. Very satisfying and packed full of flavor, this soup is super low calorie but doesn't taste like it! Simple to make and doesn't take long to prepare.
Number of Servings: 10

Ingredients

    10 Cups of water
    5 cubes Knorr Vegetable Bouillon Cubes
    6 Tsp. Knorr Caldo De Tomate Bouillon
    1 medium onion, chopped
    5 cloves of Garlic, diced
    5 small Carrots, sliced
    4 small Russett Potatoes, cut into small pieces
    3 5-6inch Celery Stalks, Sliced
    2 cups Zuccini Squash, sliced
    1 Chicken breast, cut into 1 in pieces
    1/2 cup Fresh Parsley, chopped
    3 Tbls. chopped Fresh Cilantro

Directions

Bring water to boil in a small stock pot, add all bouillons, garlic, onion, and parsley. Return to boil. Add Potatoes, Carrots, Celery and Chicken to soup base, return to low boil and simmer for about 5-8 minutes. Add Zuccini and Pasta and continue to simmer for 10 minutes or until the noodles are done. Serve with a tsp of freshly chopped cilantro on top.
