Hamburger and Cabbage Soup

Introduction

Number of Servings: 16

Ingredients

    8 oz 97% lean ground beef
    4 cups cabbage
    1 cup yellow onion
    2 cups fresh mushrooms
    1.5 cups diced celery
    1.5 cups carrots
    4 lg red potatoes
    1 leek
    1 cup stewed tomatoes
    32 oz Emeril's Chicken Broth (or other)*
    32 oz Emeril's Vegetable Broth (or other)*
    2 TBSP garlic powder
    2 TBSP Italian seasonings
    2 TBSP pepper
    salt to taste

Directions

Brown hamburger and onion together.
Chop all other vegetables
Place all items into a stock pot except cabbage.
Cook for 1 1/2 hours on low heat
Add cabbage
Cook for 1/2 hour on low heat

*I use Emeril's since the fat, calories and salt are lower than a lot of others and it has a great flavor.
