Chipotle Crusted Pork Tenderloin

Submitted by: SARA772779
Chipotle Crusted Pork Tenderloin

Introduction

This is a "dry" rub for pork but could be used on other meats as well. It is perfect way to add some flavor to an otherwise bland cut of pork. It is spicy-warm and sweet and crispy on the outside with all the juices on the inside just waiting for you to cut in and take a bite. Ingredients

    1 teaspoon onion powder
    1 teaspoon garlic powder
    3 tablespoons chipotle chile powder
    1 1/2 teaspoons salt
2 tablespoons brown sugar baking blend (I use Splenda)*
    2 (3/4 pound) pork tenderloins

*If you don't use sugar substitutes, you can use 4 Tbsp. of regular brown sugar.

Directions

In a large resealable plastic bag, combine the onion powder, garlic powder, chipotle chile powder, salt, and brown sugar blend. Place tenderloins in bag and shake, coating meat evenly. Refrigerate for about an hour, or longer if you have the time.

Lightly oil roasting pan and place tenderloins in pan. Allow them to reach room temperature prior to roasting for optimum cooking. Preheat oven to 375 degrees. Cook until internal temperature reaches 150 degrees and remove from oven. Cover loosely with tin foil and a kitchen towel to retain heat and allow roast to rest until internal temperature reaches 160 degrees, about 7 - 10 minutes.

Slices in to 6 servings. Enjoy!

Serving suggestion: Black bean and pineapple salsa (can be found in my Tried it and Liked it Recipe Box)

This is awesome on the grill, too! Just lightly oil your grill grate before heating it and place tenderloins over medium coals, turning every 5 - 7 minutes until done, about 20 minutes.

Loved it!! I used pork cutlets (not a tenderloin), cooked at 375 for 23 minutes, and added the suggested black beans and pineapple salsa. Delicious!! Family loved it!! One tweak-- I added extra crushed pineapple (Dole) to the salsa to sweeten it up ... went great with the chipotle chile. - 3/21/10

Good but too hot for my three year old. Not really the fault of the recipe but bad planning on my part. I needed apple sauce to dilute it even for myself. CHANGE 4 LIFE said 23 min at 375 and that was perfect. I'm not sure how I would change it to make it again but I think I would try again. - 6/8/10

  • Delicious cooked on the grill! I added a pinch of dry cumin to the rub, omitted the brown sugar and used regular chili powder. Will definitely make this again! - 8/25/10

  • This recipe doesn't specify how long it takes to get the internal temperature to 150 degrees. My pork tenderloin is grass fed so it shouldn't take as long to cook as a regular pork tenderloin. - 6/3/10

  • I used this spice rub on thin cut pork chops, and while I LOVED the flavor there wasn't a high enough meat to spice ratio. I might as well have just eaten the spice rub. I will try this again SOON on a tenderloin or maybe on thicker pork chops and only put it on the edges. - 5/21/10
