Simple Peanut Butter Cookies

Introduction

These are so easy to make and bake. It is really Paula Deen's Magical Peanut Butter Cookie recipe but I used real sugar on top, so needed the calorie counts for that. These are so easy to make and bake. It is really Paula Deen's Magical Peanut Butter Cookie recipe but I used real sugar on top, so needed the calorie counts for that.
Number of Servings: 20

Ingredients

    1 cup peanut butter, creamy or crunchy
    1 cup Splenda, granulated
    1 egg, beaten
    1 teaspoon vanilla extract

    For the top: 1.5 - 2 tsp. sugar

Directions

Preheat the oven to 350 degrees F. Grease a large baking sheet.

In a mixing bowl, combine the peanut butter, Splenda, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Dip the balls in sugar and place sugar side up, on the baking sheet. Press a crisscross design on each cookie using a fork.

Bake for 12 minutes, Cool slightly before removing from pan.

Makes 20 cookies.

  • I made this right away since I had all the ingredients at home. My son needs gluten-free and we were struggling to afford the store cookie prices on gluten-free. He loves these cookies, another variation we used is rolling them in confectionary sugar while warm. Yum! - 2/6/10
