Introduction

I struggled late in the day with what I could make for dinner using what i had on hand. This was prepared and in the oven in less than 10 minutes, including clean up time. Number of Servings: 4

Ingredients

    1 bag of Simply Potatoes Diced Potatoes with Onion
    1 can of Campbells' Cream of Chicken Soup
    1 cup of sour cream, reduced fat
    1/2 cup of shredded sharp cheddar cheese
    1 pound of skinless, boneless chicken breasts (3 - 4 breasts)
    salt, pepper and paprika to taste

Directions

Preheat oven to 400 degrees.

In a large mixing bowl, mix about 3/4 of the can of soup, the sour cream, salt, pepper and potatoes. Add cheese and fold in to a casserole dish.

Place the chicken breasts on top of the potato mixture and dust with paprika. Spread remaining cream of chicken soup on top of chicken breasts to cover during baking.

Bake for 35 minutes, or until breasts are cooked to 170 degrees.
