Introduction

A quick, easy meal. I've haven't tried making this with fresh spinach yet, but I am going to. A quick, easy meal. I've haven't tried making this with fresh spinach yet, but I am going to.
Number of Servings: 2

Ingredients

    1.5 cups of Spinach (drained)
    2 eggs - beaten
    1 oz. cheese (I prefer Velveta and that was used in these calculations)
    1/2 tsp. Black Pepper

Directions

Drain Spinach. Melt butter into small skillet. Add spinach, two eggs. amd cjeese. Cook until egg is done and cheese is melted. Stir in pepper. Serve with toasted bread of choice. Makes 1 1/2 to 2 servings. Calculations are for 2 servings.
