1 egg yolk
2 tbsp lemon juice
4 tbsp light butter
3 whole grain english muffins
6 slices bacon, cooked
3 eggs, poached
Whisk in the egg yolk (be careful here not to add it to butter that is too hot or it will curdle!) Cook, stirring constantly until thickened. Serve immediately over.....
Toasted english muffins topped with bacon and egg.
