Greek style spinach balls

Introduction

I found this recipe in a cookbook around 10 yrs ago and love making it, I know make it by heart. You can change the type of Feta cheese, add olive oil to make it stick and also change white rice to brown rice.. Make them into small balls, if you make the balls bigger than the size of a lime it takes longer to cook. Great side dish, or a vegetarian meal. Ingredients

    2 cups of cooked white rice( cold)
    1 cup of crumbled feta
    juice from 1 lime/lemon
    bread crumbs to roll the balls in
    salt and pepper to taste( around 1 tsp each)
    1 tsp of dill ( or more depending on your taste)
    1 tsp Olive oil( optional) this might help the balls stick together.
    1 cup of chopped spinach ( I use frozen when I don't have fresh)

Directions

I combine the rice( I cook this ahead of time and through it in the fridge to cool down, you can make this a day a head and just leave it in the fridge over night) with the feta cheese by hand then I add the spinach, lime juice, and spices. I roll these in balls the size of a lime/lemon and then roll them in the bread crumbs. when evenly coated I place them on a baking sheet and bake for 30 minutes until brown on both sides( half way through turn the balls over). Let cool and serve.
