IntroductionA simpler variation on a recipe I found in a pasta book from Better Homes and Gardens. A simpler variation on a recipe I found in a pasta book from Better Homes and Gardens.
1 10 oz. package of elbow macaroni noodles
1 lb. ground turkey, cooked thoroughly
2 scallions, sliced (1/4 cup)
1/3 cup lime juice
2 tbsp extra virgin olive oil
1 tbsp honey
1/2 tsp dried thyme, crushed
1 pkg. (20 oz.) frozen strawberries, thawed
In large mixing bowl combine noodles, turkey, and scallions.
In a screw-top jar combine lime juice, oil, honey, and thyme. Cover and shake well. Pour dressing over noodle mixture. Cover and chill for 4 to 24 hours.
Just before serving, stir in strawberries.
Makes 6 main-dish servings.
