Low Fat Oatmeal Muffins

Submitted by: DIGGING4ROOTS

Introduction

Modified recipe from allrecipes.com to add some flavor and reduce density. Think recipe would also be good with some finely chopped fresh apple (maybe 1-2), raisins and/or dried apples. Also think might be good substitute lemon extract for vanilla and add 2-3 tbsp poppy seeds. Alternatively, use 1/2 tsp lemon extract and finely grated lemon rind from a small lemon (with the poppy seeds). Modified recipe from allrecipes.com to add some flavor and reduce density.
