Hungarian Sauerkraut Goulash Szekely

Introduction

This ia a Hungarian dish that my Grandfather taught me to make when I was a child. To make this dish healthier, use turkey bacon and olive oil to saute and brown. Number of Servings: 6

Ingredients

    4 slices of bacon, diced
    2 lbs of pork, cubed to 1/2" pecies
    1 large onion, diced
    1 cup dry white wine
    4 cups sauerkraut drained and diced
    4 Tbls sweet Hungarian paprika
    1/2 tsp black pepper
    plain Greek yogurt for garnish

Directions

Makes 6 1-cup servings

Saute bacon in large pot until crisp. Remove and drain on paper towel, set aside for garnish. Remove all but 2 T. of the bacon grease from the pot. Brown pork in bacon grease. Remove and set aside. Saute onions in same pot till tender. Deglaze pot with wine. Return meat to pot with kraut, paprika and black pepper. Stir and let simmer for an hour until pork is very tender. To serve: Place in large bowl (over boiled potaoes, optional) and garnish with a dollap of yougurt and then a sprinkle of the reserved bacon bits.
