Spicy Rainbow Soup

Ingredients

    2 ccntainers of chicken broth
    2 cans diced tomatoes
    3 leeks chopped
    3 sweet potatoes, peeled and chopped
    3 cloves garlic, minced
    1 small can soybeans (opt)
    1 can black beans (may substitute another type of beans)
    1 can chopped green chilies (with juice)
    3 cups washed chopped baby spinach

Directions

Chop leeks, garlic and peel sweet potatoes and chop into bite sized pieces. Add to large pot with Canola oil. Saute for approximately 6 mins. Add chicken broth, tomatoes, beans and green chilies. Allow to simmer for 35-40 mins. Add further spices if desired.
