Cranberry Chicken

Introduction

Number of Servings: 6

Ingredients

    4 chicken breasts, slightly flattened
    1/2 cup flour, seasoned (salt, pepper, Lawry's or whatever you like)
    4 Tbsp. butter, divided in two (or light olive oil, butter is tastier)
    1 cup whole cranberries, fresh or frozen
    1 cup chicken stock
    1/2 cup packed brown sugar
    1 Tbsp. red wine or apple cider vinegar
    dash ground nutmeg
    2 cups rice (or however much you want)

Directions

1. Dredge chicken in seasoned flour. Brown in a saucepan with half of the butter or oil. Don't cook cook all the way through, just brown the flour.

2. Add remaining butter, then rest of ingredients except browned chicken. Cover and bring to simmer for 5 minutes. Careful, the cranberries might pop!

3. Add chicken on top; cover and simmer for 25 minutes (you can turn chicken halfway through). Remove cover and cook for 5 more minutes.

If not thick enough, you can make a cornstarch slurry and add to the sauce to thicken at end.

Serve with rice.
