Pam's Spinach pie

Ingredients

Spinach, fresh, 4 cup
Onions, raw, 1 small
Athenos Reduced Fat Feta Cheese, 4 oz
Cheese, Kraft Mexican Style Taco Cheese, 1 cup
Phyllo Dough, 18 sheet dough
Olive Oil, 1 tbsp
Butter, unsalted, 0.50 cup
red pepper spice 1tsp approx
salt and pepper
Directions
Preheat oven 350 degrees
Prepare filling first b4 even opening the phyllo dough package
Boil fresh spinach for 3 minutes
Melt a stick of butter and grease a 9 X 13 oblong pan.
Chop onions
Heat 1 tbsp. Olive oil in skillet and saute onion
Add 4 oz crumbled feta and 1 cup jack/cheddar cheese
Add drained cooked spinach
Add spices to taste
saute until cheese is melted and ingredients are well blended
Set aside
Carefully unwrap phyllo sheets and cut in half. You will only need half. With the other half you can either make more spinach pie or baklava or something! Keep the phyllo covered with a moist towel when not working with.
Place approx 6 sheets on the bottom of your oblong pan; brush the top with melted butter; put a layer of spinach mixture then 2 sheets, brush with butter, put another layer of spinach mixture.Top with approx 6 sheets and brush with melted butter.
Bake about 30 minutes or until the phyllo dough is golden brown.
Cut into squares-about 10
