Coconut Tilapia with Apricot Dipping Sauce

Introduction

Number of Servings: 4

Ingredients

    1 C sweetened coconut
    2 TBS flour
    1 TBS Cajun Seasoning (or to taste)

    4 Tilapia filets (can also use chicken breast)
    .5 C corn starch
    1 egg (use egg substitute or whites only for a leaner dish)
    1 oz milk (can be omitted)

    1/2C apricot jam
    2 tsp brown mustard
    1 tsp horseradish

    *I think the calorie count for this dish is actually a bit lower since most of the ingredients are for coating only.


Directions

Combine the coconut, flour and cajun seasoning

Combine egg and milk

Dredge tilapia in: corn starch, then egg wash, then coat with coconut mixture

Combine jam, mustard and horseradish to make the dipping sauce-stir well to combine.

Makes 4 servings
