Cheezy Broccoli Slow Cooker Soup

Stealthy way to serve vegetables, if you or the family doesn't normally like to eat them
Number of Servings: 12
Ingredients

2 large potatoes, sliced (or 1 potato and 1 carrot)
1 large onion
2 tbsp Better than Boullion Vegetable Base (or equivalent)
12 oz bag frozen mixed vegetables (Kroger's vegetable soup mix: carrot, potato, corn, green beans, lima beans, okra, green peas, celery, onions)
2 tbsp lemon juice
1 tsp onion powder
1 tsp garlic powder
2 tbsp chili powder (or equivalent)
6 cups water
1 box firm silken tofu (shelf stable, not the kind you get in the refrigerated section)
2 cups nutritional yeast (found in health food stores, not to be confused with brewer's yeast)
10-12 oz bag frozen broccoli (if possible, get the kind with smaller bite-sized pieces)
2 tsp tabasco sauce (adjust accordingly to taste)
salt (optional addition--not included in ingredients list)
Directions
Place all ingredients except water, tofu, broccoli, tabasco and nutritional yeast into slow cooker. Pour enough water into slow cooker to cover vegetables and seasonings. Reserve the remainder of the water. Set on low for 4-5 hours.
Add tofu and nutritional yeast.
Using a stick blender, process soup until smooth. If you don't have a stick, pour batches of soup into food processor or blender to achieve smooth consistency. Add broccoli.
Add remainder of water until it reaches near the top of the crock pot.
Cook until soup is heated.
Each serving is approximately 1/2 cup (assuming you used all 6 cups of water)

Aside from no cheese, who eats just 1/2 c. serving for a main meal? I'd have to triple the nutritional info, which doesn't end up being low cal. - 1/2/13

I usually tend to eat 2 servings of the soup with a large side of steamed/microwaved vegetables when I eat it for dinner. Because the side of veggies adds a small amount to the calorie count, I am full from the meal.
