Mushroom spinach fretatta

Introduction

A quick Brunch egg dish. A quick Brunch egg dish.
Number of Servings: 4

Ingredients

    6 large eggs
    1/2 cup non faf milk
    1/2 cup each of spinach, chopped onions, and poratabello mushroom slices
    3 slices of chopped bacon
    1 clove garlic, chopped
    1 tsp mustard
    sat and pepper to taste
    about 2 oz. white wine to deglaze pan

Directions

Fry the bacon till brown and slightly crisp
Add the onions and cook till translucent
add the garlic and Mushrooms and cook till mushrooms sweat.
Salt and pepper to taste
Add spinach and the wine, use the wine to deglaze any bacon or vegetable from the pan, and take off heat when spinach starts to wilt.


Combine eggs, milk and mustard and whisk

In a non-stick skillet sprayed with small amout canola oil spray, add 1./2 eggs at make a curd (as done for omelets)

Add the bacon and vegetable mix evenly over the cooking eggs after about 1 to 2 minutes.

Sprinkle cheese evenly over the mix then add rest of eggs. Make sure all ingredients are covered by egg.

Put in oven at 350 degrees till eggs are cooked and cheese is melted ( about 10 minutes)

Let fretatta rest 1-2 minutes then slide or flip onto a Plate to serve.
