French Onion Soup, Cheese, No Bread



Introduction

Ingredients

    1/2 stick unsalted butter
    5 large onions, peeled, halved & thinly sliced
    1/2 tsp ground thyme
    8 cups beef broth - low salt if possible
    5 cups chicken broth - low salt if possible
    salt and pepper to taste
    1/2 pint half & half
    2 cups shredded Gruyere cheese (or other good swiss cheese)
    4 springs fresh thyme, leave stripped and chopped, 2 Tbsp

Directions

Melt butter in pot over medium heat. Add onion and ground thyme and cook until brown, stirring often. Add broth, and salt and pepper to taste. Bring to a boil, reduce heat, cover and cook for thirty minutes. Turn off heat and let stand until ready to serve.
Toast both sides of french bread slices, or GF bread slices - one or two for each serving.
Bring soup back up to a bubble over medium heat. Stir in cream or half and half. Ladle soup into oven proof crocks. Top bowls with toast and a handful of grated cheese. Put crocks on a cookie sheet and place under broiler until cheese is brown and bubbling.
Sprinkle with fresh thyme before serving.
