Introduction

Great flavor for any time of year. I like to make a small batch when I roast a chicken. I think the calorie and fat count comes out a little bit higher than reality in this recipe because I drain and rinse the artichokes but can't really account for that in the ingredients. Ingredients

    1 pound loaf sourdough, cut into 1" cubes and toasted
    8oz sliced fresh mushrooms
    2 celery ribs, chopped
    1 carrot, chopped
    1 med onion, chopped
    3 garlic cloves, minced
    2 T olive oil
    2 jars marinated artichoke hearts - drained, rinsed and chopped
    1/2 cup grated parmesan
    1 tsp poultry seasoning
    1 egg
    1 can low sodium chicken broth

    Saute all vegetables with olive oil, sprinkle with poultry seasoning. Toss with toasted bread cubes. Whisk egg into chicken broth in a small bowl, pour over bread mixture and toss to coat. Spread into a 9x13" pan, bake covered with foil at 350 for 30 minutes, then uncover and bake 10-15 more minutes or until browned on top.
