Clear Spinach Broth

Introduction

I've been trying to eat clear broths before supper these days so I will fill up and not want to eat all evening. I invented this spinach broth because I LOVE spinach. Number of Servings: 6

Ingredients

    1 tsp. olive oil
    3 c. fresh spinach
    1 c chopped onion
    3 chopped celery stalks
    chicken broth
    pepper to taste

Directions

Add chopped onioin and chopped celery to olive oil in 2 quart sauce pan over medium heat. Saute until onioins are translucent. Add the chicken broth (use vegetable if you are vegetarian). Bring to a boil, add spinach and stir until spinach is wilted. Makes 6 servings

  • This was decent but a serious YIKES on the sodium. I made it while my Mom was here a second time and used water with half the amount of low sodium "Better than boillion"(1/2 teas per cup) mixed in then added a touch of lemon juice and sesame oil instead of olive. to boost flavor and it was better. - 4/23/11
