Easy Mediterranean Chicken

Simple and delicious...can be altered for lower sodium by using fresh tomatoes instead of sun-dried and substituting low salt chicken broth for boullion cube. Number of Servings: 3

Ingredients

    3 boneless, skinless chicken breasts
    1 small onion, sliced
    1 green pepper, sliced
    2 cloves garlic, chopped
    1/4 cup sun-dried tomato, chopped
    1 Tbs parsley, minced
    1 chicken boullion cube, dissolved in 6 oz. water
    Fresh ground black pepper
    1 tsp garlic powder
    Mrs. Dash Garlic & Herb Seasoning
    3 servings of capellini (or any other pasta)
    Cooking spray (can use 2 tbs olive oil instead)

Directions

Cut chicken breasts into small pieces, about 1" thick. Mix garlic powder, Mrs. Dash & ground black pepper & sprinkle over chicken pieces. Spray sautee pan w/ cooking spray & cook chicken pieces over med/high heat until browned - approx 5 minutes, turning chicken occasionally (chicken will not be cooked through at this point). Add green peppers, onions, garlic, sun dried tomatoes and parsley. Sautee over medium heat for approx. 5 minutes...be careful not to burn the garlic. Add the chicken broth and bring to a simmer. Turn the heat to low, cover & simmer for 10 minutes or until chicken is cooked through. Serve over capellini. Makes 3 servings.
